The main Veteran's Homecare site has a lot of great information that is easy to access.  The FAQ's page is definitely worth taking a look at.  Here is an example of a testimonial that was written:

Recipe of the Week


Southwest Tortilla Pizzas
These are quick and easy to make. Even though there are lots of ingredients, it's not necessary to always use the pepper or onion for topping.

Ingredients:
  • 1 can (4 oz.) chopped green chilies, drained
  • 1 can (16 oz.) refried beans
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet onion
  • 3/4 cup shredded cheddar cheese
  • 8 flour tortillas
  • 3/4 cup salsa
Preparation:
  • In a small bowl, combine the first five ingredients. Place four tortillas on an ungreased baking sheet, and spread with bean mixture to within 1/2 in. of edges. Top with remaining tortillas. Spoon salsa over tops. Sprinkle with cheese, pepper and onion.
  • Bake at 400 degrees for 10-15 minutes or until cheese is melted. Enjoy!

You should really take a look at this article.  It gives information on requirements that must be met in order to qualify for the VA Pension.  The VA Pension can help with "aid and attendance", which can include assisted living or nursing home care.  The article also contains a link that demonstrates examples of how the pension is calculated.  Very interesting information and a good way to get started.

Recipe of the Week


New Potato and Green Bean Salad
This salad is delicious and good for you too!  It yields about 8 servings, so you can half the recipe to make it smaller.

Ingredients:
  • 1 (3 lb.) bag new potatoes,  quartered
  • 1 lb. fresh green beans, cut into bite-sized pieces
  • 1/3 c. olive oil
  • 2 1/2 tbsp. white wine vinegar
  • 1 tbsp. dijon mustard
  • 1/4 tsp. dried dill
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
Preparation:
  • In a large saucepan, add potatoes to enough water to cover. Bring to a boil, and boil for for 8 minutes. Add green beans, return to a boil and cook for 2 minutes. Drain and cool slightly.
  • Place potatoes and green beans in a serving bowl.
  • In a small bowl, whisk together olive oil and next 5 ingredients. Pour over potatoes and green beans, tossing gently to coat. Cover and chill.

Recipe of the Week


Banana Bread
I love this recipe!  You can also mix in nuts for a different taste.

Ingredients:
  • 3 or 4 ripe bananas, smashed
  • 1/3 c. melted butter
  • 3/4 c. sugar
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • Pinch of salt
  • 1 1/2 c. all-purpose flour
Preparation:
  • There's no need for a mixer for this recipe. Preheat the oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
  • Mix in the sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.
  • Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack, then remove from pan and slice to serve!

Recipe of the Week


Egg and Muffin Sandwiches
These are great because you can eat them and then save the rest for next time! You can also use any meat you prefer... I like to eat mine with a piece of cooked ham.

Ingredients:
  • 12 English muffins, split in half
  • 12 frozen sausage patties, cooked and well drained
  • 12 slices American cheese
  • 12 eggs
  • 2 tbsp. butter
Preparation:
  • Cook the eggs as desired on a non-stick skillet, using 2 tbsp. of butter. (I prefer the eggs overhard.)
  • Then, make sandwiches with the English muffins, cooked sausage patties, cheese and eggs. Then, enjoy!  Or...
  • Cool the sandwiches in the refrigerator.  Once cool, wrap each in a microwave-safe paper towel and freeze.  Package them into heavy-duty ziploc freezer bags.
  • To heat, slightly unwrap the paper towel and microwave on high for one to two minutes or until the cheese is melted and the sandwich is hot.
