Recipe of the Week


Beary Good Snack Mix
This recipe is wonderful, and the great thing
is... it only takes a few minutes to prepare!

Ingredients:
• 1 pkg. (10 oz.) honey-flavored bear-shaped graham crackers (about 4 cups)
• 1 pkg. (7 oz.) dried banana chips (about 2 cups)
• 2 cups M&M's
• 1 cup salted peanuts
• 1 cup dried cranberries

Preparation:
• In a large bowl, combine all the ingredients. Store in an airtight container. Makes 10 cups.

Recipe of the Week


Shrimp Pasta Salad
This is a great pasta. It has a great taste with all of the different ingredients. This dish will make about 10 servings.

Ingredients:
• 12 oz. spiral pasta, cooked and drained
• 1 pkg. (10 oz.) frozen cooked shrimp, thawed
• 1/4 c. sliced green onions
• 1/4 c. parmesan cheese
• 1/3 c. vegetable oil
• 1/3 c. red wine vinegar
• 2 1/2 tsp. dill weed
• 2 tsp. salt
• 3/4 tsp. garlic powder
• 1/2 tsp. pepper

Preparation:
• In a large bowl, combine pasta, shrimp, onions and parmesan cheese. In a small bowl, whisk remaining ingredients until blended. Pour over pasta mixture and toss to coat.
• Cover and chill for one to two hours.

Recipe of the Week


Clover Crispies
A perfect St. Patrick's Day treat! And this recipe makes about 15 servings. You're good to go!

Ingredients:
• 3 tbsp. butter
• 4 cups large marshmallows
• 1/4 tsp. peppermint extract
• 6 cups crisp rice cereal
• 6 oz. white candy coating, chopped
• 4 drops green food coloring, optional
• Green sprinkles

Preparation:
• In a large saucepan, melt butter. Add marshmallows, cook and stir over low heat until melted. Remove from heat and stir in extract and cereal. With buttered hands, press mixture into a greased foil-lined 13 in. by 9 in. pan. Cool completely on a wire rack.
• Turn onto a cutting board and remove foil. Cut with a 3 in. shamrock cookie cutter. In a microwave, melt candy coating for 1 minute and stir. Microwave at additional 10 to 20 second intervals, stirring until smooth.
• Stir in food coloring if desired. Spoon over cutouts and spread evenly. Decorate with sprinkles.

Frozen Fruit Delights
These delights are good! I like them when it starts getting warm outside. They are a perfect after dinner dessert.

Ingredients:
• 2 pkgs. (16 oz. each) frozen unsweetened mixed fruit
• 2 cartons (6 oz. each) reduced-fat vanilla yogurt
• 1 medium ripe banana, cut into 1/4 in. slices and frozen
• 2 tbsp. sugar

Preparation:
• Place contents of one frozen mixed fruit package in a microwave-safe dish. Microwave, uncovered, at 50% power for one minute. Repeat with remaining mixed fruit.
• In a blender, place half of the fruit, yogurt, banana and sugar, cover and process until smooth (mixture will be thick). Transfer to serving dishes. Repeat. Serve immediately or freeze for up to four hours. Makes 8 servings.

Recipe of the Week


Pepperoni Pinwheels
These pinwheels are delicious! I especially like them when dipped in marinara or spaghetti sauce. You should definitely give them a try!


Ingredients:
• 1 tube refrigerated pizza crust
• 1 c. shredded part-skim mozzarella cheese
• 1/4 c. grated parmesan cheese
• 1 c. chopped pepperoni (about 64 slices)
• 1/2 c. spaghetti sauce, warmed (optional)

Preparation:
• On a lightly floured surface, roll dough into a 16-in. by 10-in. rectangle. Sprinkle with cheeses and pepperoni.
• Roll up jelly-roll style, starting with a long side. Cut into 2-in. slices. Place cut side down in a greased 15-in. by 10-in. by 1-in. baking pan; lightly press down to flatten. Bake at 400 degrees for 8-10 minutes or until golden brown. Serve with spaghetti sauce if desired.
