Black Forest Sundaes
All you have to do is take a look at that
picture, and you're hooked. :)

Ingredients:
• 1/2 c. crushed cream-filled
chocolate sandwich cookies
• 4 scoops vanilla ice cream
• 1 can (21 oz.) cherry pie filling
• Whipped cream in a can
• Chopped walnuts

Preparation:
• Divide cookie crumbs among four dessert dishes; top each with ice cream and pie filling. Garnish with whipped cream and walnuts. Freeze until serving.

Summer Fruit Salad
This salad is terrific. It doesn't take too long to make either. Serves eight!

Ingredients:
• 2 medium navel oranges, peeled and sectioned
• 2 medium kiwi, peeled and sliced
• 1 1/2 c. halved seedless red grapes
• 1 c. sliced peeled apple
• 1 c. diced honeydew
• 1 c. fresh blueberries
• 1/4 c. orange juice
• 2 tbsp. honey
• 1 tbsp. lime juice
• 1 1/2 c. sliced ripe bananas

Preparation:
• In a large salad bowl, combine the first six ingredients. In a small bowl, combine the orange juice, honey and
lime juice. Drizzle over fruit mixture; toss to coat. Chill until serving. Add bananas just before serving. Serve with a slotted spoon.

Ranch Turkey Wraps
These wraps are great because you can customize them any way you want. Rather have lettuce than tomato? Go for it!

Ingredients:
• 1/4 c. cream cheese, softened
• 1/4 c. prepared ranch dressing
• 4 flour tortillas
• 3/4 lb. sliced deli turkey
• 8 slices Monterey Jack cheese
• 1 medium ripe avocado,
peeled and sliced
• 1 medium tomato, sliced

Preparation:
• In a small bowl, beat cream cheese and salad dressing until smooth. Spread over tortillas. Layer with turkey, cheese,
avocado and tomato. Roll up tightly; cut in half.
• Makes four servings.

Recipe of the Week


Raspberry Sweet Tea
With only a few ingredients, this raspberry tea is a perfect solution for a low-sugar drink.

Ingredients:
• 4 quarts water, divided
• Sugar substitute equivalent to
1 c. sugar
• 10 individual tea bags
• 1 pkg. (12 oz.) frozen unsweetened
raspberries, thawed and undrained
• 3 tbsp. lime juice

Preparation:
• In a large saucepan, bring 2 quarts of water to a boil. Stir in sugar substitute until dissolved. Remove from the heat.
• Add tea bags, then steep for 5-8 minutes.
• In another saucepan, bring raspberries and remaining
water to a boil. Reduce heat. Simmer, uncovered, for 3
minutes. Strain and discard pulp. Add raspberry juice and
lime juice to the tea.
• Transfer to a large pitcher. Refrigerate until chilled.

Angel Food Cake with Fruit
It's hard to believe how easy this dessert is. You can't beat it!

Ingredients:
• 1 can (21 oz.) peach pie filling
• 1 pkg. (16 oz.) frozen unsweetened strawberries, thawed and drained or 1 1/2 c. fresh strawberries, halved
• 1 can (11 oz.) mandarin oranges, drained
• 2 medium apples, chopped
• 2 medium firm bananas, sliced
• 1 prepared angel food cake, cut into 8 slices
• Whipped topping, optional

Preparation:
• In a large bowl, combine the pie filling, strawberries, oranges and apples. Fold in bananas. Spoon a heaping 1/2 cupful over each slice of cake. Garnish with whipped topping if desired.

Asparagus Appetizer Roll-Ups
These roll-ups are perfect for the holidays. One recipe makes 12, so it should be enough for everyone. Enjoy!

Ingredients:
• 12 slices white bread, crusts removed
• 1 container (8 oz.) spreadable cream cheese
• 2 tbsp. chopped green onions
• 8 bacon strips, cooked and crumbled
• 24 fresh asparagus spears, trimmed
• 1/4 c. butter, melted
• 3 tbsp. grated parmesan cheese

Preparation:
• Flatten bread with a rolling pin. In a small bowl, combine the cream cheese, onions and bacon. Spread mixture over bread slices. Cut asparagus to fit bread and place two spears on each bread slice. Roll up bread and place, seam side down, on a greased baking sheet. Brush with butter and sprinkle with parmesan cheese.
• Bake at 400 degrees for 10-12 minutes or until lightly browned. Serve immediately.

Apple-Bacon Egg Bake
This recipe is a little different, but good! It makes two servings, so it would be perfect for a small morning brunch.

Ingredients:
• 3 eggs
• 1 small apple, diced
• 3/4 c. frozen O'Brien potatoes, thawed
• 1/3 c. 2% milk
• 1/3 c. sour cream
• 1/3 c. shredded cheddar cheese
• 3 bacon strips, cooked and crumbled
• Dash of salt and pepper

Preparation:
• In a small bowl, beat the eggs. Stir in the apple, hash browns, milk, sour cream, 3 tbsp. cheese, 1 tbsp. bacon, salt and pepper.
• Pour into two 2-cup baking dishes coated with cooking spray. Sprinkle with remaining cheese and bacon.
• Bake, uncovered, at 350 degrees for 30-35 minutes or until a knife inserted near the center comes out clean.
